What's for Dinner {32} - Lasagna Roll-ups

If you are looking for a fun and easy meal, this is it! Sure, you could easily prepare a full pan of lasagna but what's the fun in that? Roll-ups are the way to go, my friends. It makes for a very easy lunch the next day too!

Lasagna Roll-Ups

6 lasagna noodles
1 (28 ounce) jars prepared spaghetti sauce (I prefer Prego Traditional these days)
1 lb ground beef (we use 80/20)
2 tsp Italian seasoning (or a mix of oregano, basil, parsley)
s&p to taste
1 small yellow onion
8-16 ounces sour cream
1 cup parmesan cheese, shredded
1 cup mozzarella cheese, shredded

Preheat oven to 350 F degrees.

In a skillet, sweat the onions until cooked through. Add meat and season with salt, pepper and Italian seasonings. Then, brown the ground beef until done as well; drain fat and stir in spaghetti sauce.  Set aside.

Cook lasagna according to directions on packet.  Drain and set aside.  In a small bowl, mix sour cream with 1/2 cup each of the cheeses and season with more spices.

Lay out the lasagna noodles and spread a nice helping of sour cream mixture on each. Then add some of the sauce mixture. Then carefully roll them up.



Spread a small amount of meat sauce in the bottom of the dish.  Put the roll-ups on top of sauce and top with remaining meat sauce, mozzarella and Parmesan cheeses.











Bake for 30 minutes, until bubbly.
